Pequod's Pizza, established in 1970, has developed a cult following for its unique take on Chicago deep dish pizza. While tourists often flock to the bigger names, locals know that Pequod's offers something special with its signature caramelized crust, created when cheese is placed along the edge of the pan before baking. The original Morton Grove location was founded by Burt Katz, a legend in Chicago pizza circles. The Lincoln Park location opened in 1992 and has become known for its no-frills atmosphere and consistently long wait times, especially on weekends.
